This is the same cream of mushroom soup that I made for our New Year’s Eve dinner. I used this terrific recipe from Shutterbean; the recipe was part of her Favourite Trader Joe’s Items series. There are no Trader Joe’s here (boo!) but it’s easy to find all the ingredients.
For this soup, I added a good splash of white wine just before adding the broth; on New Year’s Eve, it was a large splosh of brandy! Do try this recipe – it’s easy and so good on a winter night.
